We've found that the perfect way to cook up a batch of bacon with minimal mess (and minimal grease burns!) is by oven-roasting. Plus, you'll have a healthy helping of bacon grease.

How to Choose the Best Bacon

Have you ever had a headache after eating bacon? Your body may have been reacting to nitrates. It is important to avoid nitrates and nitrites, which are chemicals that are added to foods to preserve them, aka to increase their shelf-life. But in foods that are already naturally preserved, either through the process of fermenting, curing, or smoking, the nitrates/nitrites are completely unnecessary and can be harmful.

So, when you're shopping for bacon, look for these keywords: uncured, nitrate-free, nitrite-free. We recommend buying directly from the butcher, or from your local natural food store. Just be sure to take a look at the ingredients if the bacon is pre-packaged. The ingredients should only be pork, salt, and maybe sugar.
